
Fredag & Fretland Bakeri is a creative and fun spot with a strong focus on sustainability and local produce.
Jostein and Mariell moved home from London and missed proper baking. So they converted an old warehouse in Lærdalsøyri into a bakery you won't forget anytime soon. Fredag & Fretland bakes sourdough bread and croissants with organic stone-ground flour in an open, airy space where you can see straight into the production. The walls are lined with wallpaper inspired by fjords and landscapes, and the whole place sits a stone's throw from one of Scandinavia's most authentic wooden building settlements.
The cardamom buns and almond croissants are what people talk about, but also bring home a country loaf or apple bread. Wash it down with local apple juice from Lærdal. They actually deliver baked goods around the entire Sognefjord for those who can't get enough. Open Wednesday to Sunday.
